weak

...That should be my middle name, at least when it comes to haircuts.

Last year I decided that I would brave the scissors and grow my hair!!!

A year ago seems so long, too long, and so... I did it again, I just couldn't do it. I believe that that crazy "grow-your-hair" strength it's just not in me, I honestly think I look terrible with long hair, and because I think so then I probably project it ( that's how it works no?)

so short, so freeing, so easy!

I'm off to enjoy all the extra time that I have. I mean I don't have to spend hours figuring out what to do with my crazy messy hair anymore.

Much Love,
Corina

Come backs

Wow.

I have not done this in a long time, to be honest I kind of forgot about this blog.
I'm not even sure people really even read this, Life has been all sorts of crazy since the last time I wrote on here. Truth be told life never stops does it? I went to Japan and came back, quit my job, volunteered for a crazy amazing Bike Race (BCBR) and tonight I'm bartending at a Gallery Opening.

I feel like each one of those adventures of my life, deserve a post on their own but who knows if that will happen.

If you are reading this, thank you, you are awesome.

All I have to say is maybe I'll make a come back and update this lovely space more often, but that's also a maybe not.

Here are a few shots from my recent adventures.

Japan

Views from BC Bike Race and the towns we visited.

97 Mexicans came out to Race this year, I was super excited to be able to meet people from the city I was born.

Welcome to School. These buses were our transportation means during the week.

Powell River was one of the coolest towns.

Billow and Brine

My good friend Gillian recently started a food blog called "Billow and Brine" Gillian isn't new to blogging at all but on this one she dedicates her time to talk all food related topics. From her very own kitchen to local restaurants to places she sees on her travels -Billow and Brine is full of interesting info.

I was super happy when she asked me to do a little Post for her.  Take a little detour and check it out.

Easter Eggs.

I couldn't resist and had to snap a few pictures with my camera.

Happy Easter friends I hope it was filled with love and gratitude. My day was amazing and I am so thankful for the people that have been filling my life with so much joy this past couple of months.

I hope that you took the time to remember why Easter is important, I spent this weekend surrounded by worship and love from my church. I am so thankful for what Jesus did for me on the cross, and for all his suffering. Death lost it's sting and He is Risen indeed!

Cookie Omnoms

and this om nom is Glutten Free and delicious.

To make this delicious cookies you'll need:

3/4c Brown rice flour
1/2c Quinoa flour
1/4c Oat flour
3/4c raw coconut sugar
1 pinch of fine sea salt
1/2tsp ground cinnamon
pinch ground cloves
pinch ground nutmeg
125g dark chocolate or cocoa nibs roughly chopped
115g of coconut spread
1tsp vanilla extract
Finely grated zest of 1 small orange
If you eat eggs you can add  one free range lightly whisked. I didn't add egg and these cookies didn't crumble but you might want to give it a try.

Preheat oven at 350F. Mix wet ingredients (Coconut Spread, Vanilla and egg if you decide to use it) in a bowl and slowly incorporate dry ingredients. Mix to form a soft dough. you might want to chill the dough for 30 mins and then incorporate the chocolate and the orange. It makes for a crunchier cookie. With a medium size scoop make dough balls and place them into a tray. bake for about 10-12 mins or until edges are slightly golden. ENJOY!

Much Love,
Corina

#whatsonmycuttingboard

In a world of Hashtags here's one more for you :)

 ...

If you aren't familiar with what a hashtag is, I'm really not sure where you've been, but let me fill you in:

People use the hashtag (#) before a keyword or phrase (without spaces), may be tagged by including one or more with multiple words. You can search for the hashtag you want and get everything and anything (tweets, photos on instagram and so forth) you are looking for.

  ...
Anyway...

I recently started taking photos of the ingredients I use for my meals/smoothies/cookies and placing them on my cutting board. I used the hashtag "#whatsonmycuttingboard" to group them. Because I know you are all super anxious to find them all!  :)

This is just for fun, and I mean I take pictures of everything anyway, but in this way I've slowed myself down and I'm taking the time to analyze what's in my meals. I also happen to really like the results so far. Which you know it's always a plus.

Because this "project" it's been displayed on Instagram, photos will only be taken with my phone, but I mean look at that quality! Dang Iphone 5 you're pretty amazing.

Much Love,
Corina
